Nutritional biochemistry
Research Area:
Diet for sustainable health
The human diet plays a key role in health and disease. Diets rich in fruits and vegetables are associated with substantial reduction of disease risk, which offers the perspective to manage healthy ageing by specific dietary choices. Recommendations need however to rest on sound scientific reasons. Understanding the molecular basis by which dietary phytochemicals reach biological targets and induce cell responses is the focus of this research line. Its results are of value for the general population, the public health authorities, and the agrofood sector.
